I have to admit, my main motivation for growing radishes was the fact that they grow quickly and (I was told) are pretty hard to kill. A win win in my book!
However, after chopping a few up for taco night and snacking on some with hummus, I was ready to try something new.
I came across this bon appetit recipe for roasted radishes and decided to give it a try.
Because it is impossible for me to follow a recipe, I also roasted some beets to add to the dish. It turned out pretty tasty. Roasting the radishes mellowed out their peppery flavor and they tasted just like any other root veggie. Enjoy!
