Green Chili

Before moving to Colorado, I had never heard of green chili. In Nebraska, we have chili, the tomato-based soup full of ground beef and beans. In Colorado, we take a cue from the Southwest and put green chili on everything ā€“ burgers, fries, burritos, the list goes on. Even more confusing to me, green chili is not really green! It is more of a pinky beige color. However odd or misnamed it is, the sauce is delicious.

Last weekend, Skip and I checked out the neighborhood bar Rocky Top Tavern for brunch. I was delighted to discover $3 Bloody Marys and $3 breakfast burritos. The burrito had tater tots on the inside and green chili on top. Best of all, they let our pup Neeko hang out on the patio. I think we found our new breakfast spot.
